Bean & Cheese Nachos

Great, now I'm sharing recipes.......In any case I may try these, they're from the WeightWatchers website.......

Bean and Cheese Nachos

Servings: 4
Preparation Time: 8 min
Cooking Time: 5 min
Level of Difficulty: Easy

4 oz Baked! Tostidos Bite Sized Triangles
1 cup fat-free canned refried beans
1/2 cup shredded reduced-fat Monterey Jack cheese
1/4 cup salsa

Instructions:
Preheat oven to 350ºF. Layer Baked! Tostidos Bite Sized Triangles on an ovenproof platter or baking sheet. Spread beans evenly over tostidos and sprinkle with cheese. Bake until beans are hot and cheese is melted, about 5 minutes. Top with salsa. Yields about 8 chips per serving.

Mental Pics

Thanks for that mental picture Krista, it is one that i will spend days trying to erase from my mind. I wonder if garry is too busy with excercise to join us with his thoughts and digs or is he hiding somewhere with a large bucket of ice cream and a bag of tim horton's.

I thought that the week days were hard enough to watch what you eat, but the weekends....holy cow is it even harder. Especially since I am spending this one on the couch recovering from 12 1/2 hours of skiing.

Scott, have you tried protien shakes or bars?

So cute

So, as you may have guessed from Scott's earlier posts, he's never had any experience with dieting or even attempting to eat healthy. To say that it has been a wake up call for him is a huge understatement. While I've been dieting/trying to eat healthy for the last year, he would often look at me and say/think, "can't you just not eat that" or he'd look at me when I was having something I should with judgement in his eyes. He wasn't trying to be mean, he just didn't understand. Well, last night, if I was a mean person, was payback (p.s. I must be a mean person, 'cause I kinda enjoyed his pain). Picture this...

Even though he'd just eaten 3 cups of popcorn.

He was even rocking back and forth at one point.

It's interesting to see a man who never seemed to eat much (besides chips and slurpees) suddenly hungry all the time.

He was even cursing the TV because of all the food ads.

Paybacks a bitch, ain't it Scott?!?

As much as I don't really want to encourage any of you to win... i have found a website that seems to be a good tool for our competition. I entered my information and got quite an eye opener at how poorly I really eat. No longer do I wonder where all this extra weight came from. I am now going to say good bye to almost everything that tastes good and start doing the exercises in the videos instead of just watch them.

Scott - Before the Apocolypse.....

Here's my before picture........once the laughter dies down keep in mind that I've switched to COORS LITE.......watch out suckers!!!!





I guess since I have agreed to it, I have to post before pics. They are awful but very good for motivation. Since everyone else has disclosed their motivation I should do the same. First, I have a 12 year old daughter that is showing signs of being a bit on the lazy and unhealthy side and I figure that the best way to teach her is to set a good example. Her and I are competing against all of you as a team. Secondly, nothing fits anymore. I have bought some bigger sizes and would much rather wait and spend some money on new clothes that are are new smaller size. Thirdly, I just feel gross. Lastly, Eric has always said that my butt has to fit in the gate (put both of his thumbs together with pinky fingers straight out ) and it doesn't anymore. No matter how big his hands are and he stretches his fingers out. LOL


This competition and seeing my before pics is a great motivation to get to the point where i feel better about my health and appearance and look forward to 21 weeks of encouraging competition.

I have some great recipes for all of you to try, I love to cook and bake all the time. I promise I won't post anything fatty LOL Good luck to you all!

Strawberry Spinach Salad with homemade dijon dressing!

Spinach leaves
fresh strawberries diced
purple onions sliced
sliced almonds (opt)
And the dressing is dijon mustard, honey, and olive oil you can also add garlic if you like to the dressing, just add bits at a time until the consistency is good, and finger taste, you'll know when its ready.

Chocolate Template

Scott's First Entry, (staying clear of the smack talk out of fear)

If one more person tells me to just "quit" drinking pepsi cold turkey....I may need a good lawyer.....
On a brighter note, I made it through the day without a Slurpee. I anticipate the shakes to arrive tommorrow sometime in the afternoon. Keep in mind that I have consumed a Slurpee just about every single day since a was 16. I'm 30. Imagine the shock my kidneys are going through right now.
I also thought I would share the reason that I joined this little competition with you all. Two reasons - first off I CANNOT let Gary be smaller than me. If that happens I might be forced to steal his bright yellow suspenders at conference this year. (and I don't look good in yellow) The second reason is that about a year ago I went to see my doctor for some obscure reason, and I hadn't seen him in a few (like 4) years. His first comments, before even asking me why I was there, were to tell me that I was looking alot like my Dad. Not a good thing. My Dad, bless his heart, has a pot belly the size of a small medicine ball. That was before I turned 30. I've put on more weight since, and recently a large, portly, round, retired firefighter refered to me a "Husky". I was standing next to my brother-in-law. He is about 5'10", 265 lbs. AND I WAS CALLED THE HUSKY ONE!!!!! HUH???? Anyways, that is why I am joining this little competition.
I'll be the brave one and post the first pics......

Week #1

Monday marked the start of our Biggest Loser competition. Here are the rules (as I understand them - please let me know if I'm wrong)...

1- Weigh-in is on Monday morning of each week (weight must be done at the office and verified by Veronica)
2- The competition will run from February 19th until July 21st.
3- Each week, each competitor must contribute $5
4- The competitor with the greatest percentage of weight lost each week does not have to pay the $5 that week
5- The overall winner of the competition will win the pot
6- Competitors joining the competition after Week #1 will only be entitled to the pot collect from the date they joined.

Did I miss anything?

The purpose of this blog is to track progress of this competition, and more importantly for the competitors to talk smack! Good luck to all!
